It is the way we cook and prepare foods what has the biggest effect in their health-giving properties. So what vegetables are healthy and which are not?

The thing is to eat as fresh food as possible and and do little with the food you're going to eat. However, sometimes such an attitude becomes bad, some foods need to be prepared properly. What is the healthiest way to eat your fruit and vegetables?
Sometimes frozen vegetables are better than fresh ones. For instance, peas - they are frozen within two hours from picking and shelling and that prevents the nutrients from escaping whereas fresh peas spend more than a day in transportation. Obviously, frozen vegetable are better than fresh ones out of season.
Tomatoes, for instance, are considered to be superfoods which provide the whole spectrum of vitamins and nutrients. However, cooking them boosts their health-giving properties, adding them to the pizza is the healthiest choice you can make. Even though while cooking tomatoes vitamins escape, the levels of translycopene (an antioxidant) rise substantially.
Salads which are sold in bags, already chopped and washed are worse than an ordinary lettuce - they are often washed in chlorine solution, some of them have more bacteria that you would wish to have. And above all, they lose 10-20 percent of vitamins and nutrients while transportation and storage.
Another thing you should know is that all types of cabbage, sprouts and brassicas lose their nutritional content while boiling. And finally, canned fruit and vegetables are lower in healthy nutrients than fresh ones. So prepare your foods well and enjoy their taste and nutritional value!
