"Eat more slowly" my mother used to say but I didn't listen, I was always in a hurry. These days when hurry up is the only expression we hear eating slowly has began to be popular. The article present aims and goals of Slow Food Movement.

An idea of slow food
It all began in Italy, in 1986 with the protest of Carlo Petrini. This lover of an Italian tradition, culture and cuisine with a charisma typical for Italians opposed the opening of MacDonald Restaurant which was supposed to be opened near the Spanish Stairs in Rome. He opened a non-profit organization called "Slow Food" which began to take care of protecting and supporting regional food producer, especially food that can't be found anywhere else. The next aim of Slow Food organization is preserving and promoting traditional food products, along with their lore and preparation, promoting original food which is endangered because of the persistent expansion of fast food. The manifesto of this organization is "protection of rights to taste", in the same time Slow Food lobbies a new way of living and eating which means discovering tastes instead of their passive consumption.
Hectic pace of life takes our attention out of details which actually constitute real taste of life and food. It turned out that people forgot about one of basic values of human's existence, sensuous pleasure. This usually means taking pleasure in simple relaxation, peace, time spent with family and friends as well as tasting delicious and healthy food. Eating should be done without hurry, in peace and concentration. We should savor smell, taste and beautiful look of a meal. Slow food wants to save from sinking into oblivion all those disappearing species of plants and animals as well as regional cuisine elements. A new institution has emerged called "The Ark of Taste".
Food in slow food style is not unprocessed, produces in a traditional way without the use of modern technology in food production. Products don't contain any supplements, artificial flavors, colorings, preservatives, enhancements of taste or smell. Production which obliges the slow food rules forbids using processing, pulverizing, frying, applying high pressure but promotes traditional smoking and drying, stewing, marinating, pickling, maturing and squeezing. Slow food supporters underline that food produced in such a way not only has a unique taste and smell but is also rich in nutrients and biologically active substances which protect the organism from diseases and increase immunity. A snake is a symbol of slow food movement, this slow animal seems not to adapt to the world that surrounds us. It is a symbol of protest against the hectic pace which become for many people an obsession.
